I have worked with a text to question creator as well: https://github.com/yedidiaklein/moodle-local_aiquestions. GIFT is a great format to use with large language models, since it's so compact!
I also gave a talk on how to use AI-created questions for formative and summative assessment in Moodle at the MoodleMoot Finland last May, it's available here, in case somebody's interested: https://blogs.helsinki.fi/moodlemootfi24/language-models-and-assessment-in-moodle/
I'd love to have a session on the topic at the BarCamp too.
For example, I can set up a demo environment of the plugin we use at the University of Helsinki. (cf. https://blogs.helsinki.fi/moodlemootfi24/harnessing-genai-for-enhancing-moodles-assessment-capabilities-a-collaborative-workshop/)
